Caring for Chocolate
Factory-made chocolates often have high percentages of sugar which acts as a preservative.
We are not a factory: our chocolate is hand made fresh daily by an artisan chocolatier. We do not use a lot of sugar. Our chocolate is best consumed when you first receive it. All chocolate, especially truffles, are sensitive to heat and humidity.
It is important to store them in a cool, dry location until consumption. The optimal storage temperature is 64F / 18C.
If you have a wine refrigerator, that is a good option.
If you need to store them in the kitchen refrigerator, wrap them in a tea towel and keep them in the crisper to minimize humidity.
Most of our dark chocolates are fresh up to 3 weeks from the time of receipt if you follow these recommendations. Milk chocolate will keep slightly longer as it has more sugar. White chocolate has a high sugar content and will keep the longest.
